Recipe of the Week!
Tapas Bar Peppers
2 oz bleu cheese
2 oz fontina cheese
2 oz asiago cheese
1 tsp fresh lemon juice
1T fresh baby arugula, chopped
1 T extra virgin olive oil
1 clove garlic-crushed 1 tsp. toasted pine nuts
1 large jar roasted peppers (about 5)
salt & pepper to taste
fresh or dried parsley for garnish
*Allow all cheese to come to room temperature. Cut cheese into small chunks and add to the mixing bowl in food processor along with garlic, arugula, lemon juice and pine nuts.
Pulse, while gradually adding olive oil. Season with salt & pepper to taste.
Drain roasted peppers well on paper towels and pat dry. Cut peppers into 2 inch strips.
Heap a teaspoon full of cheese mixture into the pepper strip and roll up. Chill in refrigerator for at least 2 hours. Before serving, cut into small pieces, secure with toothpicks and garnish with parsley.
