Winter 2010 Cooking Classes at the Greenbriar Inn
Filled Pastas/Desserts-February 15 6:00-9:00 PM
This class features many favorite recipes with a twist! Our Chef Cheryl will share her experience with you (20 years of cooking Italian dishes) and there will be a lot of hands-on and recipes for you to enjoy. Not to mention wine samplings along the way!
Topics covered will include home-made raviollis, tortelliinis, gnocci, manicotti, and canolli. Sauce recipes and of course construction of these sauces will be covered as well: Marinara, Bolognese, Spinach florentine , and Alfredo.
Be prepared to come hungry, my friends!

Greek “Meze” Party!-February 20 11:00 AM to 2:00 PM
Greek “Meze” is comparable to Spanish “Tapas”: Small bites of food to be shared with friends and family: Larger than an appetizer, smaller than a main course!
Our class features favorites such as zucchini fritters, spinach pie, hummus with several “twists”, eggplant appetizer rolls, grilled breads with mizithra cheese and accompaniments, stuffed grape leaves, Greek shrimp, and mussels with rice and tomato.

South of the border “Comfort Foods”- February 27 6:00 PM to 9:00 PM
The thing that we love about food is that every recipe has a human history. This class will be taught by Lynne and Frank Wiedemann. They originally started “Franklin’s Hoagies’” on 4th Street and Wallace back in 1984 or 1985, as they migrated from Philadelphia to Coeur d’Alene. Several years later they sold Franklin’s Hoagies and Lynne helped us establish “Greenbriar Gourmet Catering” in 1986. So the story goes…7 years later Lynne and Frank established themselves in Todos Santos, Mexico. They went native, and learned from their neighbors, truly authentic Hispanic foods. They conducted cooking classes in Todos Santos for many years, until 2009, when unfortunately, their home and cooking class location was burned to the ground last year by arsonists! Now, they would like to share their expertise with you, providing just a sampling of dishes that they have shared with and learned from their native friends:
Sopa de Tortilla (tortillia soup), Sopa de Alpondigas (meatball soup), Posole de Pollo (chicken posole),Served with select accompaniments and achiote pepper bread, finished with a Mexican pear and chocolate dessert.

Spanish Tapas- March 1 6:00 PM to 9:00 PM
You’ve all heard about Tapas by now. The idea originated in Spain! It means “Covered (by) plate”, or “Small plate”. Years ago, to keep fruit flies from swarming into wine glasses, the Spanish covered their glass with a small plate. Later, they took to using this plate for little bites of food, known as Tapas. This class explores the Moorish and French influences on Spanish Cuisine. We will provide you with a list of common Spanish ingredients to stock your larder with.
Topics covered will be Basque Eggs, Smashed potatoes with romesco sauce, Paella, grilled Serrano ham on bruschette, the classic Spanish fresh tuna salad, gazpacho with shrimp, pork and pine nut empanadas, and finished with a fresh fruit dessert and sauce.

Home Bartending Class-March 8, 6:00 PM to 9:00 PM
Perhaps you enjoy entertaining but wish you knew more about how to set up a bar that serves more than beer and wine? Maybe this class will provide you with the incentive to restructure a corner of your house into an adult entertainment center that doesn’t feature music or TV! Genevieve Waldman, our head bartender at 315 is willing to share her knowledge with you from her side of the bar.
Topics covered will include basic bar set-up (types of glasses and equipment needed) basic liquors with inexpensive and top-shelf suggestions, and blind tastings of different vodkas, gins and rums to demonstrate the differences in quality. Also a discussion of what liquors are actually made from, basic recipes for commonly requested drinks, bar terminology, hands on shaking and pouring techniques, and bar terminology. Of course, we will have appetizers to munch on during class!

Elegant French Cooking made simple-March 13-11:00 AM to 2:00 PM
Have you ever noticed that your friends never invite you over for a French dinner? And French restaurants in this area are far and few between? Well, we believe this is largely due to a wide spread notion that all French cuisine is complex and laden with dairy products. Not so! This class is designed to discuss some of the classic French dishes that are simple, yet elegant.
Starting with a classic leek and olive tart, then a tasting of lobster bisque, moving to a delightful plate that is commonly shared, called Salad Nicoise, next, whipping up some cognac shrimp accompanied by “haricots verts” with carmelized onion, and finishing with the incredibly simple but delicious chocolate grand marnier crepes and crème fraiche!

Don’t be intimidated by peppers!-March 15 6:00 PM to 9:00 PM
This is a class conducted by guest Chef Alex Nebrensky, of Hayden Country Club fame. Chief saucier, Alex is going to show you how to recognize different and unusual applications for peppers.
Information provided would be the history of peppers that will go back as far as 7500 B.C. A chart of “scoville units” (heat) of different peppers and some unusual peppers and how to use this information when cooking with them. A brief talk about “ghost pepper”, and information of the health benefits of the capaiscum and peppers. Among other things, the class will be preparing chicken enchiladas the authentic way, Spanish rice, and of course some sauces and crèmes using peppers with some surprise ingredients. We believe you’ll go home, inspired!

Classic Sauces-March 22 6:00 PM to 9:00 PM
Alex Nebrensky, head Saucier at the Hayden Country Club is the best teacher we know of for this class. Do you avoid dishes with sauces because it seems too difficult? Then a whole world of cuisine awaits you when you master the “Mother Sauces” in this class. A list of applications for these sauces will be provided, as well as in-class sampling with some of these applications.
Topics to be covered: Bechamel Sauce, Veloute Sauce, Brown Sauce, Espanole sauce, Hunter’s Sauce, Hollandaise Sauce, Mayonaisse, vinaigrettes.

East Indian Cuisine-March 27 11:00 AM to 2:00 PM
Chef Chris Lovejoy returns to teach one of her favorite cusines. Her classes are always so popular because she is able to make even complex dishes look simple by careful demonstration and lots of class participation.
Recipes to be created and sampled are Samosas, cilantro-mint chutney, Aloo Gobi (cauliflower, potatoes and tomato dish), Chana Masala, (a type of chickpea curry) Sweet Potato Korma, Raita,(commonly a yogurt-based dip) and Basmati Rice.

Kids Love to Cook March-29-5:00-8:00 PM
This is an open-ended class at this point. Chef Alex Nebrensky has long wished to do a class for kids, and as you know, children love to cook. So what we want to know is: what would THEY like to learn. Give us a call and we’ll structure a class, just for them! Ask for Kris at 208-667-9660. Price is yet to be determined.
