| South of the border “Comfort foods” Feb.27 The thing that we love about food is that every recipe has a human history. This class will be taught by Lynne and Frank Wiedemann. They originally started “Franklin’s Hoagies’” on 4th Street and Wallace back in 1984 or 1985, as they migrated from Philadelphia to Coeur d’Alene. Several years later they sold Franklin’s Hoagies and Lynne helped us establish “Greenbriar Gourmet Catering” in 1986. So the story goes…7 years later Lynne and Frank established themselves in Todos Santos, Mexico. They went native, and learned from their neighbors, truly authentic Hispanic foods. They conducted cooking classes in Todos Santos for many years, until 2009, when unfortunately, their home and cooking class location was burned to the ground last year by arsonists! Now, they would like to share their expertise with you, providing just a sampling of dishes that they have shared with and learned from their native friends:Sopa de Tortilla (tortillia soup), Sopa de Alpondigas (meatball soup), Posole de Pollo (chicken posole),Served with select accompaniments and achiote pepper bread, finished with a Mexican pear and chocolate dessert. Classes are $45.00. Children over 12 are welcome for those aspiring chefs in your family! If you want to bring a partner in for the last hour and have them enjoy the dinner that you have cooked, prices are an additional $25.00 for their company, and a bottle of wine is included in your dinner for two.
